American born chef Chris Salans studied the art of cooking in France, where he imbibed the passion for culinary excellence and exacting standards of classic European cuisine. He worked with several Michelin star chefs, learning from masters in his trade and honing his craft. His passion for cooking started to bloom when he discovered Asian cuisine, and soon enough, he was on a flight to Bali, embarking on an exciting culinary journey that would take him to the top of the restaurant business. Opened in 2001, Mozaic is the pinnacle of Salans’s career. Combining classic French techniques with the vibrant and surprising flavors and aromas of East-Asian food, Chris has put Ubud fine dining on the world culinary stage.
Mozaic’s kitchen team is now headed by Blake Thornley, a creative force. He worked alongside Chris Salans, honing his craft over a decade ago at Mozaic. Chef Blake, from Christchurch, New Zealand, started working in kitchens at the age of 11 and has a passion for cooking and creativity. A world traveller who has sampled and learn from Michelin star restaurants and chefs of Europe, the US, and Asia , where he advanced his culinary practice and developed new recipes reflecting local traditions, worldly influences, and unique tastes.
