How Mozaic Was Founded

Mozaic restaurant represents a fresh oasis of ingenuity in the world of gastronomy. We pride ourselves on being unique - and we want to create meals that live up to the standards of Michelin star food.

In 2001, Mozaic Restaurant was founded by Chris Salans. At the time, he was Executive Chef of The Legian in Bali. But, he wanted to explore something new and try something different. So, Mozaic formed and has been the closest thing to a Bali Michelin Star restaurant for 18 years.

Who is Chris Salans?

Chris Salans is a world renowned chef who’s worked in famous eateries throughout France. His professional training began in Le Cordon Bleu in Paris, but his talents saw him travel the world. While not technically a Michelin star chef, Chris has worked at various Michelin star restaurants. He soon came to Asia, where he fell in love with the cuisine. From this, Mozaic was born.

Chris noticed that no restaurants were boasting a Michelin star in Ubud, so, he wanted to create a dining experience that could live up to these high standards. He won a restaurant award at the 2017 World Gourmet Summit as Mozaic took home the Best Asian Restaurant Prize.

Since forming Mozaic, Chris has gone on to release award-winning books and feature as judges on Top Chef Indonesia and Iron Chef.

Mozaic’s kitchen team is now headed by Blake Thornley, a creative force.  He worked alongside Chris Salans, honing his craft over a decade ago at Mozaic. Chef Blake, from Christchurch, New Zealand, started working in kitchens at the age of 11 and has a passion for cooking and creativity. A world traveller who has sampled and learn from the cuisines of Europe, the US, and Asia , where he advanced his culinary practice and developed new recipes reflecting local traditions, worldly influences, and unique tastes.
