What is Cuisine du Marche?

Cuisine du Marche brings together Indonesian culture and (as you can probably guess from the name) French culture by taking seasonal Indonesian ingredients and cooking and presenting them in a traditionally French fashion.

Put simply, molecular gastronomy is the application of scientific techniques and principles to the understanding and development of food production. Our chefs proudly using physics and chemistry to alter the tastes and textures of the food we serve, creating the most innovative lunch in Ubud and dinner in Ubud. The table is decorated with rose petals and we also offer the option of a bouquet of romantic red roses.

If you want to see our culinary masters at work, make sure to book the chef’s table. This is generally available during the high season. Our workshop functions as a dining space where you can observe exactly what the chefs are up to in the kitchen. Considering the exciting final product of molecular gastronomy, it’s not all too surprising that it’s quite a treat to be able to watch how our chefs prepare it!
