The three best restaurants in the Ubud area are the Mozaic, Lamak, and Ary's. The edge has to go to the Mozaic, where I've never had anything that wasn't fabulous. Set in a lush garden, the food presentation and service at Mozaic (Jl. Raya Sanggingan; 361-975-768; www.mozaic-bali.com) are all flawless. Try the six-course tasting menu($27) or the veal with cactus flower sauce. Chef Christopher Salans mixes up the menu so you'll never taste the same dish twice.
