If you care to try a revolution of your taste buds, then be persuaded to take yourself and your buds up to the lush blanketed hills that are Ubud to restaurant 'culinaire', 'Mozaic'.To get there may seem like a daunting hike, but use it to your advantage to soak up the stunning sur-rounding views, to be followed by cocktails at sunset upon your arrival. This restaurant sprawls like a mosaic through a culinary Eden that tapers down to river and rice paddy views. The surrounding gardens harvest many of the ingredients which chef Chris Salans uses to enhance his superb cuisine. This also means that the menus change on a daily basis, ensuring the freshest of the fresh. Chris countinues his original approach to culinary temptation (let's not forget that he introduced the use of organic local produce to the Balinese kitche'ns of several top hotels) by way of 'Market Cuisine'. From the moment you arrive, the experience of fine dining in a relaxed atmosphere of tropical elegance, is one to be treasured. Do be tempted by the 'Degustation' Menu; a seven course de light (with a choice of entrees as well as vegetarian), as this is the perfect introduction to Chris' blend of France meets America' cooking techniques - with a Balinese twist! His aim is to tease and please the palate, but also to hopefully educate by means of his original ingredients and their flavours. My lesson was on the fruity 'Singapore' berry featured in a dessert - I'll leave it for you to try .As the photo suggests - a glass of your favorite tipple awaits, and then it's a magic carpet ride into sensual pleasure for the remainder of the evening at Mozaic from 6pm. Onwards, six nights a week. Enjoy - well ... how could you not!
