Mozaic Restaurant in Ubud embodies the philosophy of Chris Salans at the highest culinary level: gastronomic discovery in an elegant setting with impeccable standards of service. “I wanted that special Balinese warmth you find in Ubud, but with a totally professional staff.

" I wanted the wait staff to be able to not only recite the menu but to explain it, to understand the dishes and know how they’re made and what’s in them, to pronounce the wines correctly. Everyone told me I was crazy to open a gastronomic restaurant in Ubud. They said it would never work. But I didn’t care. Ubud was where my heart was and I was going to stay.” States Chris Salans. The team of eighty staff that run the beautifully orchestrated dinner service of Mozaic are led by the executive manager, Tjok Bagus Senajaya, who has been a major part of the success of Mozaic in the warm and professional service offered by the staff as well as taking the role of Wine Director whereby since 2006 Mozaic’s wine list has been recognized by Wine Spectator USA with the Award for Excellence.
