Mozaic Restaurant Gastronomique introduces Chef Blake Thornley as its new Executive Chef. The news announced by Chef Chris Salans on his new social media efforts, introduces New Zealand native Blake Thornley who has actually been in the kitchens of Mozaic Restaurant Gastronomique in Ubud for a few years. Behind the scene and in the shadow of Chef Owner Chris Salans, and now Mozaic Beach Club Chef James Ephraim, Chef Blake has been the Mozaic cooking class head teacher and second in command to previous foreign chefs. Now trusted to the limelight, Chef Blake takes over as executive chef of Mozaic in Ubud.
In the philosophy of Mozaic, Chef Blake, takes the kitchen of the Mozaic Restaurant Gastronomique by continuing a tradition of excellence in the kitchen of the famed restaurant. At the helm of Chef Chris Salan’s gastronomy restaurant in Ubud, Blake Thornley promises to dazzle in the footsteps of Chef Salans and Chef James Ephraim, adding his own truth to the ministry of culinary excellence Mozaic Restaurant Gastronomique in Ubud has become.
Growing up in a chef’s world, Blake Thornley was already in the kitchen of famed New Zealand chef and uncle, Peter Thornley at age 14. Starting his own kitchen career at Cellier le Brun, Marlborough, New Zealand, Blake Thornley has an early career in new Zealand’s top establishments, like the Yacht Club Resort in Picton, New Zealand, the Crowne Plaza Christchurch and at Bracu Restaurant in Auckland. Moving on to Australia, Chef Blake worked at Rock Restaurant in Hunter and Pier Restaurant Rose Bay Sydney, 2 and 3 hats rated restaurants. It’s after a stint as Sous chef at Lizard Island that Chef Blake headed for Bali to join Chef James Ephraim in the kitchen of Mozaic Restaurant Gastronomique.
“I am home at Mozaic and I have a great relationship with the kitchen team. I am just thrilled to ‘see my name up in lights’, but it’s just back to business for me, no real change in my daily life. I’ve been working so close to James and Chris for the last few years, I really feel like this is my place.” Says Chef Blake.
